Healthy Southern Fried Chicken

Let me introduce you to ‘Pablo’s Chicken’ a healthy take on southern fried chicken that uses no grains, sugar, or dairy and is baked not fried. This recipe is really easy, it’s crunchy coating, juicy meat and punchy flavours leave you extremely satisfied. You don’t feel like your missing out on anything but you won’t feel like you’ve ingested a tone of grease which makes you feel sluggish and bloated.

Ingredients

Chicken
– 6 pieces of chicken (thighs and drumsticks or legs )
– 180g of ground almonds
– 2 eggs
– 1 tbs of ghee or coconut oil

Spice Mix
–  3tsp of hot smoked paprika (or 2.5 tsp of smoked paprika & 0.5 tsp of cayenne pepper)
– 1.5 tsp ground cumin
– 1.5 tsp sea salt
– 1.5 tsp dried thyme
– 1 tsp dried thyme
– 1 tsp onion powder ( optional)
– 1 tsp garlic powder ( optional)

1. Preheat the oven to fan 180°C/356°F/Gas mark 6 and line a baking tray with baking parchment

2. Mix the ground almonds and ingredients for the spice mix in a bowl. In a second bowl, beat the eggs

3. Dip the chicken pieces, one at a time, in the egg, then coat in the mix of ground almonds and spices and lay on the baking tray

4. Gently heat the ghee and use a spoon to drizzle it over the pieces

5. Bake for 45 minutes until golden and sprinkle with some sea salt and pepper

Serve with broccoli rice, coleslaw, sweet potato fries, salad, hand-cut chips. The options are endless.
