Healthy Breakfast Option

Breakfasts don’t need to be boring, in fact, this breakfast can be eaten at any time of the day. Whilst this crunchy bowl used to be the only breakfast I could wake up to, the ultimate breakfast salad has been my go to as of late. It’s protein and fibre rich and keeps me fuelled right through to lunch. It’s the perfect way to start my day.

I often keep pre cooked sweet potato in the fridge just to have on hand for salads, and I always have eggs in the kitchen. You could switch bacon to smoked salmon or even scrap meat and roast some mushrooms and tomatoes. Even some berries or figs would work well with the spinach and feta…basically there are a huge aray of options!

I opted for a fried egg as they’re super easy and I like them, but boiled or poached would work too!

If you had pre made your sweet potato and boiled eggs in advance, swapped the bacon for smoked salmon … you really could through this plate together in well under 5 mins. How great would that week day breakfast be? I’ve given you a few swap suggestions but I’m sure you cn think of tonnes more, for now here’s the recipe for The Ultimate Breakfast Salad.

You will need:

1-2 handfuls of spinach
2-4 slices of bacon (or smoked salmon or roasted mushrooms/tomatoes)
1/2 an avocado
1/4-1/2 a sweet potato, roasted
sprinkling of feta
1-2 eggs, fried/boiled/poached

Simply combine all your ingredients to make you ultimate breakfast salad! – I told you it was easy.
