– 100g-200g cashew nuts
– zest of 1-2 limes
– coconut oil
– salt and pepper
1. Heat 1teaspoon – 1 tablespoon (depending on how many cashews you’re using) in a frying pan over a medium/high heat.
2. Once the oil has melted, add your cashews and VERY generously season with salt and pepper.
3. Once the cashews have turned a deep brown shade, removed them from the heat and grate over lime zest.
These are great on their own or added to a salad or on top of a curry for adding crunch, try it with different nuts to mix things up!
